Caviar should never be served or handled using metallic utensils which can ruin the delicate flavors of the caviar. For serving caviar, only spoons made of mother-of-pearl should be used. Mother of pearl is a smooth shining iridescent substance forming the inner layer of the shell of some mollusks, especially oysters and abalones. Unlike metals it is nonreactive allowing caviar's delicate flavors remain untainted. We offer spoons in three different sizes, 2.5-inch, 3-inch, and 3.75-inch
